PASTA DELICIOUSNESS

Do you ever get these meal ideas in your head, and when you actually make it come together it's better than you thought it would be?!?! Well let me tell you my friends...this is that dish!

It took all we had to keep our portions in check with this dish, it was so good! 

Bacon makes anything taste better, but with the asparagus...mmmmm...it went hand and hand. Let alone the whole container of parmesan cheese, that could of helped too.

It was one of those dishes that the kids loved, and that always makes a Mom happy. To top it off the pasta was a fun shape too...

Lets get on to the inner workings of how I made this amazing pasta dish! 


What you need:

1 Lb. Box Pasta (I used galletti or whatever you have on hand works too.)
1 Package Thick-Cut Bacon
1 Bunch Asparagus 
1 5 oz. Container Parmesan Shreds
1 Cup Hot Pasta Water (you may only need 1/2-3/4 cup, but reserve more just in case) 
2 Tbsp. Olive Oil (divided)
1 Tbsp. Butter
1 Tbsp. Minced Garlic
Salt and Pepper for Seasoning

We are going to be doing all these steps simultaneously to cut down on cooking time and to be able to get a delicious home cooked meal on the table in less than 30 minutes. Ready...lets go!


Start by opening your package of bacon and slicing it into chunks.


Heat your skillet on medium-high. Place all the bacon in the skillet and let it cook until brown and crisp. But not burnt!

Now fill your pot with water and bring it to a rolling boil.

Once your pot of water is on the stove waiting to boil and your bacon is still cooking, lets get the asparagus going.


Start by getting all your asparagus on the cutting board and find your "breaking-point" on one or two of the asparagus. 


To find your "breaking-point" you want to hold each end of the spear and bend the ends towards each other.


It's hard to show you one-handed but I attempted and oh-yeah whatever you do, DON'T look at my nail polish!



Now that you have your point, cut all the other asparagus at that same point too. Then cut your asparagus into thirds.


Scoop bacon out when done and place it on a paper towel lined plate to soak up any excess oil. Set aside.

Drain out all the bacon grease out of the pan, BUT do not wipe clean! 


Place pan back on stove at medium heat and add 1 Tbsp. olive oil and 1 Tbsp. butter, stir to combine.


Add all of the asparagus and sprinkle with pepper, just a small amount of salt and cook for about 10 minutes or until tender. 

At the last minute or two of cooking add your tablespoon of minced garlic to the asparagus and keep heating on medium.

Your water should be boiling by now...add your pasta of choice.


Now add your bacon to the asparagus and heat together.


Check your pasta for tenderness, you want the pasta to still have a little bite to it because it will finish cooking in the pan when everything is added together.

If done, strain pasta BUT make sure you conserve at least 1 cups worst of hot pasta water.


Add your pasta on top of the asparagus and bacon. Before you stir it together, add about half of the container of parmesan cheese. Stir to incorporate and then add your last half of parmesan, 1/2 cup hot pasta water and 1 Tbsp. olive oil and stir. 

Heat till everything is melted and heated through.


Season with pepper to taste.

If you feel it is too dry, you can add a little more pasta water and olive oil and check if it needs more pepper after that.


This little guy thought Momma hit it out of the park with this dish! 

He gave it a thumbs up.


Good thing we have enough leftover for lunch today...
