TURKEY PEPPERONI SPAGHETTI

I cook just about every night of the week, and I have learned you need to have a few key things that you can whip up in a jif after getting off work, school, practice etc.  A meal that satisfies the whole family, this usually has to do with pasta...or pizza for my fam!


I came up with this recipe on one of those days when you are looking in the pantry and fridge thinking, what am I going to make???  I had all the ingredients for spaghetti and a half bag of turkey pepperoni...and viola, magic happened-Turkey Pepperoni Spaghetti!

What you will need:

1 package Turkey Pepperoni (any brand)
1 whole Onion, chopped
1 1/2 tbsp. Extra Light Olive Oil (any oil you have on hand will work)
1 tbsp. Minced Garlic
Salt (sprinkling for the meat and some for the pasta water)

1 to 1.5 lbs Lean Ground Turkey
1 Package Spaghetti 

Parmesan Shreds to garnish and complete the dish.


Heat your pan on medium-high and place the olive oil, onion, minced garlic and pepperoni in the pan. Cook for 1-2 minutes then add the ground turkey with a dash of salt. 

Right now you also want to get your pot of water boiling to add your pasta. When your water is boiling add a good amount of salt to the water to flavor the pasta.


While the ground turkey is browning, incorporate all the onion/pepperoni mixture together.


Once all the turkey is browned on the outside it's time to add your sauce.


Add your favorite jarred or homemade sauce to the pan and place on med-low to simmer for about 5 minutes.

Reserve about 1/3 cup pasta water to add to your sauce jar to clean out whatever is still left and pour into the meat/sauce mixture.


When you pasta is finished and drained, transfer to your serving dish or pan and sprinkle a good handful of parmesan on the pasta. 

I tossed the pasta a little to incorporate some of the cheese.


Now pour or ladle on about half of the meat and sauce, toss, and then pour the rest of the sauce on top. To finish the pasta off sprinkle another good handful of cheese and toss again. 


It should take you about 15-20 minutes to make a delicious heap of spaghetti, turkey, pepperoni and cheese mixture all the family will love. If your lucky you should have left overs for the next day too!


Doesn't the spaghetti and pepperoni look so good, the pepperoni gives the meat a good flavor with out having to add a lot of seasonings. 

Optional: you can make a salad to go along side or some garlic bread is always a winner.
