MEXICAN STYLE AVOCADO TOAST

Avocado toast is sweeping the nation right now!

Last year was all about kale, now this year avo-toast.

Don't get me wrong, I L-O-V-E avocado toast, but my Mexican roots always want me to indulge with avocado wrapped in a tortilla, topped with a little bacon.

My Grandma and my Mom have been doing this since I can remember. I think, if I can remember, my Grandma would put slices of avocado on toast...?


So to start this beautiful and wonderful creation you want a perfectly ripened avocado. Take the pit out and make a few cuts goings longways and across. Now get a spoon and scoop out the inside into a bowl and mash all together. Salt and pepper to taste, more pepper than salt though.

I bought a bag of 6 or 7 avos from Sam's club, unripened, and placed them in a dish on the counter to ripen. Perfection!


Then I made a tray of bacon. Yes...a tray, my favorite way to cook bacon! 

*Place bacon on sheet tray lined with foil and cook at 375°F, flip bacon once and continue to cook until golden brown.


Now that your avocado is mashed, now you can leave your slices of bacon whole or chop up into bite size pieces. I chose to chop!


The other star of the show is a warmed and grilled tortilla heated directly on the stove of a gas burner. If you have an electric stove you can heat it in a pan/griddle...no microwave!

The assembly process...


Place a good amount of avocado on to one side, not in the middle-but not the edge, for rolling purposes. 

Then place a generous amount of bacon and roll to perfection!


*Variation- If you don't want to use a tortilla, replace the tortilla with a slice of whole-wheat toast, spread avocado on the toast and top with bacon.
