I love a good meatball sub!
The ooey gooey cheese, the warm marinara sauce on top of the meatballs, a good toasted bun, yum yum yum!
To make this meatball sub a little more waist friendly, I made the meatballs out of lean ground turkey.
The ingredients you will need are:
2 Lbs. Lean Ground Turkey
1 Jar of your Favorite Marinara Sauce
1 Pack of Fresh Sub Rolls
1 Pack of Sliced Provolone Cheese
1/2 Cup Parmesan Cheese Shreds
3/4 Cup Plain Bread Crumbs
1 Tsp. Pepper
1 Tsp. Salt
1 Tsp. Cumin
1 Tsp. Garlic Powder
Oil for Browning
Transfer your ground turkey to a mixing bowl. Add all of the ingredients in the bowl and mix together. Make sure to not over mix, or your meatballs will be tough. And no one likes tough balls!
To portion out, I used a cookie scoop so that all the meatballs were uniformed in size.
Remember I said that I wanted to use my slow-cooker more this year!? Well I am breaking it out again!
Pour your sauce in the slow-cooker and turn it on high. (Use a slow-cooker liner if possible, clean up time is a breeze!)
Now pour enough oil in your skillet that the whole bottom is covered and them some.
Heat the oil on medium high.
When oil is hot, place your meatballs in the pan.
Make sure not to over crowd your pan when browning.
When the meatballs start getting a golden brown, turn them over and brown the other side.
After all that’s finished…transfer to a paper towel to absorb the excess oil.
Place all the meatballs in the sauce.
Cook on high for 1 1/2 to 2 hours in your slow-cooker.
You can also finish cooking your meatballs and sauce in a pot (if you don’t have a slow-cooker) on the stove for about 45 minutes at a nice gentle simmer. Make sure you have a lid on or the sauce will be popping out!
Once your meatballs are done. Line a cookie sheet with foil (for easy clean-up purposes of course) and open your sub rolls.
Lay your desired amount of meatballs and sauce in your rolls. Next layer two slices of provolone cheese on top and place in the broiler to melt the cheese.
Keep a close eye on your rolls because they will go from beautifully melted to burnt really quick.
Now you can add some more sauce if you want too.
NOW time to enjoy!!!
With our subs, I served a side of garlic sauteed broccoli that is delish!
Use one/two bags of frozen broccoli. Under cook it in the microwave by 1 minute, per directions on the back of bag. Drain all of the excess water out of the bags.
Transfer to a pan on med/high with 1 tbsp. each of olive oil, butter and garlic paste (secret weapon). Sprinkle some salt and pepper and stir stir stir so that all the oil, butter and garlic are smothering the broccoli.
Cook for about 1 to 2 minutes, then eat!
Bryce loves his broccoli this way! He always say, “Mom what did you put on it, it’s delicious!”
I roast my brussel sprouts and asparagus in the oven with the same seasonings, he eats those up too.
