My favorite sandwiches are grilled panini’s or to have them toasted, with the cheese melted, the bread warm and the crunch of the fresh greens in the middle…yum!

A couple of key ingredients to making a great toasted sandwich are, good bread and good cheese. A loaf of french bread is to big, you want to go to the bakery in your store and look for a good baguette, ciabbata, something along those lines. For cheese, my favorite specialty cheese brand is Kerrygold, all of their cheeses are great for melting and flavorful, but any cheese that you can get your hand on with work too.

I am going to show you how to make one of my favorites here! 

What you will need:


Deli meat



Spinach or Lettuce (optional)

Cherry Tomatoes (optional) 

Olive Oil


Toaster Oven, set to Broil.  If you don’t have a toaster oven, just set your big oven to broil.

First start with your bread.

Next slice it down the middle.

Spread both sides with mayo. I know not everyone likes mayo, so here you can spread your favorite condiment.

Now on one side add your desired amount of meat and cheese. Some like heavier meat ratio, some like 1:1 and some like more cheese less meat; that’s why they are made to order.

I am using my toaster oven, so I had it set to broil and I lined the little baking sheet with foil for easy clean-up. Next I placed the two halves on the foil-lined sheet and placed them in the oven for 2 min. 30 sec. for my desired meltidge.

For the fixins I put spinach, halved cherry tomatoes, a light sprinkling of pepper and olive oil. Place the lid on top and there you have an awesome toasted sandwich.

If you are at home at the time of lunch this would be perfect! This would also be great for dinner if you want something that is lighter and not so heavy. 

The options that this sandwich hold are endless…you can make it Italian themed and have salami and mozarella or pastrami and provolone…ok I will stop here, you get the pic.
