Chile Verde is a classic Mexican dish that uses pork slow cooked in tomatillos and green chiles. The best way to eat chili verde is over a bed of Mexican rice and a side of flour tortillas for "pinching." If you are asking the question, what's pinching? Well it is basically a spoon/fork for the Hispanic culture, everything gets pinched with a tortilla, you tear a piece of tortilla off and use it to pinch some food in it. Comprende?

Ok, back to the subject, so my easy and quick way of making Chili Verde is with a good green enchilada sauce! It is quick, easy, delicious and inexpensive; perfect-everything that I am looking for!

Here is what you need:

Boneless Pork Chops 
1 Lrg. Can Green Enchilada Sauce
1Tblsp. Olive Oil

First you want to lay all of your pork chops on a cutting board.

This is the green sauce I like to use!

Cube all of your pork up into small squares or your desired size.

I use my pasty-cutter or pastry-scraper for scooping up the cubed pork.

Have your pan on med-high heat with a tablespoon of olive oil on the bottom before adding the meat to the pan.

Now you want to get a nice crust on them in quick amount of time, just keep flipping every 1-2 minutes. You do not want to cook your pork all the way through. So once all the outsides are white and you have a little crust, you add the sauce.

Adding the sauce is easy, open the can and pour!

You want to bring the sauce to a low simmer and reduce the heat to med-low. Let it simmer for about 15-20 minutes, the sauce will reduce and thicken. At this point while the sauce needs time to finish cooking the pork, you can make whatever sides you want to pair with it. Traditionally it would probably be rice or beans, but you can make any side you want or what you have in your pantry.

After 20 minutes of simmering they are nice and tender and oh-so flavorful!

This main dish cost less than $10.00 to make and I made a lot. Pork is pretty inexpensive and flavorful if not over cooked...
