Today I am sharing with you a recipe I created for breakfast, snack or anytime. It is essentially a breakfast oatmeal square with whole-wheat flour, oatmeal, flax meal and some other great ingredients. Before I get into the recipe and how to make it, I wanted to share a little mom-confessional- a “mom-fessional”! You know because a mom confessional and oatmeal square go together so well… 🙂
My husband has a GREAT relationship with our kiddos, he is an amazing father to both of them, all the time! Now Bryce is getting older, wanting to spend more time with his Dad and not so much his Mom anymore and I feel like I am the nagging parent to him. Reminding him to pick up his room, get dressed, leave your sister alone, follow directions…etc…etc….
I get the bad attitude, the back talk and he gives his Dad the good behavior, and listens to him so they can practice football and talk video games, movies and boy stuff. I asked him why do you get along so well with your Dad and with me you don’t want to do anything with. He told me, him and I don’t really have much in common anymore. 🙁 Talk about breaking a mom’s heart with her little boy. I feel like I do so much for him and make sacrifices, he doesn’t even know about to give him the best life possible and I get the short end of the stick. So basically I am jealous of my son’s relationship with my husband?!?! Great.
I don’t like to complain, I usually keep stuff inside or just let a few of my close people know how I am feeling, but I thought maybe putting it out there will let me release how I am feeling inside. A mom-fessional so to speak. Thanks for listening to me, thanks for letting me vent and put it out there. I am sure I am not the only Mom feeling like this at times.
Now onto a happier place where there is Kerrygold Butter involved…aaaahhhhhh! Hey news flash Walmart carries Kerrygold Butter now…isn’t it amazing. I use to make a special trip to Trader Joe’s just for butter, crazy! Ok…enough about butter, I sound like Paula Deen. Ha!
Start by preheating your oven to 350°F.
Combine 2 sticks softened butter or 1 8 oz. package of Kerrygold. 1 Cup brown sugar and 1/4 cup white sugar.
Whip the butter and sugars together until you get a nice creamy consistency.
Now add 1 tsp. vanilla extract and 2 eggs.
In a separate bowl combine 1 1/2 cups whole-wheat flour, 1tsp salt, 1tsp. cinnamon and 1tsp. baking soda.
Stir it all together and incorporate the flour mixture with the wet ingredients. Try not to over mix!
Measure out 1 1/2 cups walnuts and place them in a heated pan on med-high and toast them. You want to toast the walnut for about 2-4 minutes, stirring often. This will toast them and bring out their oils.
Once toasted transfer to a cutting board and chop into smaller pieces.
Measure out 3 cups oatmeal, 2tsp. flax seed meal, and 1 cup shredded coconut. Add to these ingredients to the mixer and make sure you don’t over mix!
Grab your 9×13 pan, grease and flour the bottom and sides.
Transfer your heap of oatmeal to the pan and use your fingers to spread the mixture out evenly.
Bake for 10-12 minutes of until top is golden brown.
Now when it is finished you should have an amazing golden brown, oatmeal deliciousness.
I inverted the pan onto a cutting board and flipped it so it is not sitting directly on the cooling rack.
When they are completely cool, cutting them into squares and enjoy with a cup of coffee in the morning, tea or a glass of milk.
