I can’t start this pizza blog off without mentioning this weekends weather!?!?!!! Wasn’t it amazing, it was a much needed summer rain storm for this whole area. What surprised me the most is how much rain the storm actually brought!!! It was much needed for the farmers, lawn growers, and the risk of wild fires for the time being. I know my water bill will appreciate it…HA! The only down fall was it made it so humid, you started sweating as soon as you went outside…oh well, I’ll take it for a summer rain storm.

OK…on to my post!

I was looking through my pictures on my computer wondering what to post, I didn’t really have anything planned and BAM there it was, a whole pizza post I never shared. Way to make a girl’s life easy huh…

First and foremost, who doesn’t love pizza?!?! Well a couple of weekends ago I made a huge batch of pizza dough, some to use and some to freeze, the pizza dough recipe is from The Pioneer Woman cookbook. It’s so easy it’s fool proof , hhhmmmm maybe not fool proof…, but if you follow the directions you should be fine!

Follow the direction’s on how to make the dough in the link above and once your dough is ready you can make one of my versions.

Start by preheating your oven to 500°F.

Drizzling your olive oil onto the pan and spread it around with your fingers. Now stretch and work your dough to fit your baking sheet.

Drizzle more olive oil on to the pizza dough and work it around until it’s coated completely.

Sprinkle with a little salt and pepper and grated parmesan shreds.

Now mince your fresh rosemary really small and sprinkle across pizza.

Last but not least…fresh mozzarella, pull of little pieces and lay them all over. Fresh mozzarella melts so much nicer and the taste it so much better too.

Ok, now place in your 500°F oven for about 8-10 minutes or until cheese is melted and crust is golden brown.

This recipe is so easy and delicious, you can make it as an appetizer and cut it up into small bites or have with a glass of wine/beer.

The rosemary is very subtle, but it gives it a great rustic taste!
