Italian food is one of my favorite foods to eat and or cook…!!!
Chicken Parmesan is one of those dishes that takes a little bit of extra time, but is so worth the wait. This is a nice Sunday dinner meal for my family.
When I made this dish, the chicken was cooking away in the oven and both girls came down stairs saying, “what is that smell, it smells so good!?!” and Bumper kept asking “when is that food ready”…it was that good!!!
Chicken Parmesan completes me! 🙂
What you will need:
4 Chicken Breast
Jar of your Favorite Spaghetti Sauce
1 box of Pasta (I like using Spaghetti for this)
Seasoning (salt, pepper, Italian seasoning, chili powder)
4 tablespoons water
Gallon size Ziploc bag
Preheat oven to 400°F.
Trim your chicken breasts. 🙂
Place one chicken breast in the Ziploc and use your mallet to pound the chicken till it is all one thickness. Repeat till all four are done.
Get 3 shallow dishes out or pie plates and fill one with a cup full of flour. The next one with the 2 eggs and about 4 tablespoons water and whisk to make your egg wash. The third dish will have about 2 cups Panko, 1/2 cup flour, a pinch or two of salt, a liberal amount of ground black pepper, 1 tsp. chili powder, a tablespoon of Italian Seasoning. Use a fork and mix Panko breading mixture together.
Now grab your baking sheet and either spray with non-stick spray or drizzle with a little olive oil. (I drizzled the oil only where the chicken would be).
Now with each chicken breast you are going to lay both sides in the flour. Now dip both sides into the egg wash and then lay both sides into the breadcrumbs making sure they are very well coated. Then place on baking sheet and repeat.
Before placing in the oven drizzle a little olive oil on top of each chicken breast.
Then pop in the oven for 15 minutes on one side and then flip over for an additional 10 minutes.
During this time you can boil your water and cook your pasta.
Now switch your oven to broil on low and put some spaghetti sauce on each and top with mozzarella, bake until all cheese it melted. 1-2 minutes (don’t walk away!)
Pour remaining sauce on your cooked pasta and mix.
Remove from oven and let cool.
This is so delicious…I could eat this every night, but my pants wouldn’t forgive me!
