If Bryce had a choice, we would be eating at Panda Express every night! That is how much he loves their Beef & Broccoli and Orange Chicken. But as you can imagine that would get really expensive and not very healthy. So I sought out to make the Best at home Beef & Broccoli! You can throw this dish together along with a pot of white rice in less than 30 minutes, this is the perfect weeknight meal.
This Beef & Broccoli dish has been on repeat all summer long, sometimes twice a week, so I’ve really had the chance to get the recipe right. The girls love it too and usually eat all their broccoli first because they say it taste so good!
This recipe serves five.
For the meat:
1 pound of stir-fry strips
3 tbsp vegetable oil + 2 tbsp butter
salt, pepper, garlic powder & dried minced onion to season
For the sauce:
3/4 cup water
1 tsp pureed ginger
3 tbsp minced fresh garlic
1/4 cup soy sauce
3 tbsp brown sugar
1 tbsp corn starch
3 12oz. bags frozen broccoli
4 cups of your favorite, cooked white rice
optional garnish, green onion
I usually start my white rice before I start the meat, so it’s done at the same time.
In a skillet on medium-high heat, heat oil & butter. While the oil & butter heats, season your meat with salt, black pepper, garlic powder and dried minced onion. This step goes fast so don’t walk away.
Place as many strips you can in your skillet without over crowding.
At this step all you are doing is browning the meat on one side, then flipping over. This doesn’t take long!
Once one of the strips is browned on the other side, place on a plate next to the pan.
You do not have to wait for all strips to brown at the same time, thinner ones will brown faster.
Replace with remaining strips till all done.
Then turn heat down to low.
All the meat can set aside on a plate while you make the sauce.
In your skillet add the pureed ginger + minced fresh garlic and stir.
Do not burn.
Depending on your pan either use a whisk or wooden spoon to heat the ginger & garlic, making sure to scrape up all the little bits that are stuck to the bottom of the pan.
Then add your water + soy sauce, bring heat up to medium-low and stir.
Once incorporated add your brown sugar and stir.
Now sprinkle in the corn starch, stirring the whole time so you don’t get clumps.
Let the sauce heat up to a low simmer to thicken, maybe 1 minute.
(Start cooking your broccoli.)
Turn pan back down to low and add back in your meat and any juices that have collected at the bottom of the plate.
Now let the meat heat with the sauce and continue cooking your frozen broccoli in the microwave as directed on the back of the bag.
Drain any water from the bags after they are cooked either from the microwave or stove top and place in pan.
I personally like getting these size bags from Walmart,
Then toss all the cooked broccoli with the meat and sauce, heat and serve.
Serve over white rice and garnish with green onion (optional).
