Hey Friends, today I’m sharing with you a quick & Easy way to make Breakfast Tacos recipe and it’s all made in the microwave! Yes, you heard me right, microwave.

Now I don’t think you are going to believe when I tell you what I used to make them…

Yep, Ore-Ida’s Just Crack an Egg, All American Scramble kit! All you need is 1 fresh egg (not included).

You can find them in the refrigerated section next to the cartons of eggs.

They have no artificial flavors, dyes or preservatives.

I buy them at my local Walmart Grocery Store. They also come in a few different “kits” and are just under $2.

This is perfect for busy mornings and also would work out great for a college student where they only have a microwave to cook with.


Peel the lid off and take everything out of the cup.

You have 3 sealed pouches filled with fresh potatoes, cooked bacon crumbles and cheddar cheese.

First crack your egg in the cup.

Next break the yolk and stir it all together with a fork until it looks like this.

Open all 3 pouches and stir the contents all in with the egg.

Depending on your microwave’s strength put it in for 30 seconds and then stir.

Now put it back in the microwave for an additional 50 seconds and stir when done.

* If you feel like it needs a little longer, put it in for an additional 15 seconds.

There you have it, a delicious scramble in less than 2 minutes.

Now let this sit on the counter for a second while you get your corn tortillas ready.

Get 2 corn tortillas and wrap them in a damp paper towel.

I fold the paper towel like I’m folding a little present and put them in the microwave for 40 seconds.

When done, place both warmed tortillas on a plate and divide the scramble in half on each tortilla.

I like to elevate these tacos by adding some fresh cilantro and hot sauce, which is totally optional.

Can you believe this was all made in the microwave…and with little mess!

You can also make this with 2 eggs, just increase you micro. time to 45 sec, stir and then 1 min, stir.

These breakfast tacos are super simple and so easy and if you are trying to cut down on your food costs, eat at home!
